Buffalo Chicken Salad Recipe
It’s National Margarita Day!
Of course I live in San Antonio where every day is Margarita Day, but you people who don’t have the luxury of living here should celebrate too.
You may recall I made a rotisserie chicken and some pumpkin protein pie yesterday. I ate some of it too!
Today, I’m using the rest of that tender, yummy chicken to make a buffalo ranch salad.
Here’s how it works:
Dice 2 chicken breasts
Dice 1/2 Onion
Dice 4 large stalks of celery
Apply copious amounts of Louisiana Hot Sauce
Add Ranch dressing to taste and mix thoroughly.
Serve on shredded lettuce or in pita pockets.
Eat it soon because the longer it sits, the spicier it gits.
Still 167 today. I got carried away with kids and work yesterday and didn’t make time for a workout until it was too late. I only got about 20 minutes of easy biking in.
