Cookies for Breakfast? YES!

My kids love the idea of getting one over on breakfast.  It’s not that they don’t love breakfast foods.  Breakfast for dinner is also a favorite for them.  But nothing gets them going in the morning like a plate of cookies!

Don’t worry, I’m not giving them a dish of Oreos.  I make them healthy, sugar free, vitamin and fiber packed cookies.  Here are the recipes for two of their favorites, Maple Pumpkin Cookies and Banana Spice Cookies.

Favorite Breakfast Cookies

Maple Pumpkin Cookies

2 teaspoons Cinnamon

1/2 teaspoon Nutmeg

1/2 teaspoon Cloves

1/2 Cup Coconut Oil

1.5 Cups Stevia Powder (Truvia mixes cup-for-cup the same a sugar)

1 Can Pumpkin (not Pumpkin Pie Filling)

2 Eggs

1 teaspoon Maple Extract

Mix thoroughly and drop on greased baking sheet.  Bake a 375 degrees for 15 minutes or until the bottoms are golden.

Banana Spice Cookies

1.75 Cups All Purpose Flour

2/3 Cup Stevia Powder (Truvia mixes cup-for-cup the same a sugar)

2 teaspoons Baking Powder

1/2 teaspoon Baking Soda

1 teaspoon Cinnamon

1/2 teaspoon Nutmeg

Dash Cloves

1 Cup Mashed Ripe Bananas

1/3 Cup Coconut Oil

2 Eggs

Mix thoroughly and drop on greased baking sheet.  Bake a 375 degrees for 15 minutes or until the bottoms are golden.
