Sugar & Gluten Free Protein Power Brownies http://wp.me/p4hGmz-27nI wanted to have brownies, something that tasted like dessert but wouldn’t kill me with sugars and throw me into a carb coma.  What I got was a protein power-packed, light, fluffy, snack that could be a meal.

I started with this recipe (don’t make these):

Regular Brownies

4 Eggs
½ teaspoon Baking Powder
2/3 Cup Cocoa Powder
1 Cup Flour
½ teaspoon Salt
2 Cups Sugar
1 teaspoon Vanilla
1 Cup Butter
Bake at 350 for 35 minutes in 9×12 Pan

Then I tweaked it for the following:

  • I wanted dark chocolate, not milk chocolate.
  • I wanted to use coconut flour instead of wheat.
  • I wanted it to be sugar-free.
  • I wanted it to have just as much protein as a protein bar.
  • I wanted it to be very low in net carbohydrates (carbs – fiber).

Power Brownies

8 Eggs
½ teaspoon Baking Powder
2/3 Cup Hershey’s Special Dark Cocoa Powder
1/3 Cup Coconut Flour
½ teaspoon Salt
2 Cups Stevia Powder
1 teaspoon Vanilla
½ Cup Textured vegetable Protein
1/2 Cup Butter (for a fudgey brownie, add another ½ Cup Butter)

(Top with unsweeteded coconut flakes)
Bake at 350 for 25 minutes in 9×12 Pan
Serves 8 (11g Protein, 2.5g Net Carbohydrates per serving)
